Christmas Pomegranate Salmon Fillet

A festive showstopper of a salmon dish, glazed in a sweet-tangy mix of pomegranate molasses, maple syrup, and rosemary. Roasted until melt in the middle and topped with sparkling pomegranate jewels, it’s the perfect centre piece for a celebratory table.

  • 1 whole side of salmon fillet
  • 15 g butter
  • 4 tbsp pomegranate molasses
  • 1 tsp dried rosemary
  • 4 tbsp maple syrup
  • 1/4 tsp pepper
  • rosemary sprigs (to decorate)
  • pomegranate seeds (to decorate)

Cooking Intructions

  • 1. Preheat your oven to 180°C (160°C Fan) / 400°F / Gas 5.
  • 2. Make the glaze: gently melt the butter in a pan, then stir in the pomegranate molasses, maple syrup, rosemary, salt, and pepper. Bring to a light boil for 4–5 minutes, then set aside to cool slightly.
  • 3. Prepare the salmon: place your Regal Fish side of salmon on a lined baking tray and generously spoon over the glaze so every inch is coated. Roast for 15–20 minutes, depending on the thickness of your fillet, until the salmon flakes beautifully. Spoon over any glaze that’s collected on the tray for extra shine and flavour.
  • 4. Finish & serve: transfer to a serving platter, add rosemary sprigs around the salmon, and scatter with pomegranate seeds for a vibrant, festive touch. Serve with your favourite seasonal vegetables and crispy roast potatoes.
