Ingredients
- Haddock
- Bunch of Mint (leaves only)
- Bunch of Parsley (stems and all)
- 1 tbsp white wine vinegar
- 1 tbsp extra virgin olive oil
- 1 Red Chili
- 4 cloves garlic - peeled
- Salt to taste
Cooking Intructions
- 1. Add all of the ingredients with the exception of the fish into a mini chopper. Pulse until you get a well combined paste.
- 2. Cook the fish to your liking. If using haddock, we like to keep the skin on and cook through the skin to get a crispy base and then flip for a few minutes to brown the top.
- 3. Remove the fish from the pan and spread the sauce over the fish. Serve with baby new potatoes, rice and veg or salad of your choosing.
- 4. If you have excess sauce, you can keep it in the fridge for 3 days in an air tight container.
