Twice as Good Prawn Cocktail

Prawns Cocktails are a Christmas classic, and for good reason. They have stood the test of time and remain a favourite starter on the big day. Throughout the years, we have tried many different recipes for the ‘ultimate’ prawn cocktail but we think you can’t beat the classic. However, to add a bit of excitement, we like to use two different types of prawns. Our cold water (smaller and full of flavour) prawns and our giant, chunky king prawns. Not only does this add an extra bit of extravagance on the big day, but the prawns complement each other, adding a new depth to the dish. The crunchiness of the fresh lettuce and radishes with the creamy and juicy cucumber-avocado mix and the prawns creates the ultimate mouth feel. This recipe will make 8 starters or 16 canapes and can be halved or doubled depending on how many mouths you are feeding.

Ingredients

  • 370g Cold Water Prawns
  • 400g Cooked King Prawns (Tails Removed)
  • 2 Baby Cos Lettuce Shredded (You can use whatever crunch leaves you like)
  • 1/2 Cucumber diced into 2cm cube
  • 2 Avocados diced
  • Small Bunch of Dill – chopped, no stems
  • 1 Lime
  • 4-5 Radishes sliced 1 cm thick
  • 2 Spring Onions Finely Sliced
  • 4 tbsp mayonnaise
  • 2tbsp Ketchup
  • Dash or Tabasco (add more to taste)
  • Dash or Worcestershire sauce
  • Salt and Pepper to taste
  • Smoked Paprika

Cooking Intructions

  • 1. Start by prepping your veg ready for the salad. Follow the measurements in the ingredients section.
  • 2. Add the cucumber, avocado, and a squeeze of fresh lime juice to a mixing bowl. Mix well, ensuring the avocado does not go mushy. The lime juice will prevent the avocado from browning. Add the dill and a pinch of salt and mix again until evenly spread throughout the mixture.
  • 3. Add the mayonnaise, ketchup, tabasco and Worcestershire sauce into a bowl and mix well with a pinch of salt and freshly ground black pepper. Add in the prawns and coat well.
  • 4. Using glass cups, you want to layer your ingredients up. Start by adding the lettuce, followed by the cucumber and avocado mix. Add the radishes and pile in the prawn mix. The prawns should be in the top third of the glass. Sprinkle on the spring onions and a pinch of smoked paprika.
  • 5. Serve immediately and enjoy.
