Ingredients
- 800 g haddock loins (4 × 200 g)
- 80 g panko breadcrumbs
- 200 g mayonnaise
- 1¾ tsp Old Bay seasoning
- ¾ tsp garlic powder
- 1¾ tbsp fresh chopped parsley
- Salt and freshly ground black pepper
- Lemon wedges, to serve
- Extra fresh parsley, to garnish
Cooking Instructions
- 1. Preheat the oven to 220°C.
- 2. Pat the haddock loins thoroughly dry with paper towels. Place them on a baking tray lined with parchment paper or lightly greased. Season with salt and freshly ground black pepper.
- 3. In a bowl, combine the panko breadcrumbs, mayonnaise, Parmesan, Old Bay seasoning, garlic powder and chopped parsley. Mix until everything is evenly combined.
- 4. Divide the Parmesan mixture evenly between the four haddock loins and spread over the top of each loin, creating a generous layer of crust.
- 5. Bake for 12–15 minutes, depending on the thickness of the loins. The haddock should be opaque and flake easily when tested in the thickest part.
- 6. Switch the oven to the grill/broiler. Grill the haddock for approximately 2 minutes, watching closely, until the Parmesan crust is golden brown and crisp.
- 7. Serve immediately with lemon wedges and a little extra fresh parsley.
- 8. Serve these Parmesan Crusted Haddock Loins with Mediterranean-style roasted vegetables, steamed broccoli or your favourite seasonal vegetables for a simple, delicious and well-balanced meal.
