Easy Haddock Curry
This easy haddock curry is a delicious, comforting midweek meal that’s packed with flavour and ready in around 25 minutes.
Tender haddock fillets are gently cooked in a creamy tomato and coconut curry sauce, with garlic, ginger and warming curry spices.
It’s simple to make, light enough for a weeknight dinner and delicious served with fluffy basmati rice or warm naan.
Ingredients
- 2 Haddock Fillets
- 1 tbsp vegetable or olive oil
- 1 onion, finely sliced
- 2 garlic cloves, finely chopped
- 1 tsp fresh grated ginger
- 1–2 tbsp curry powder, depending on taste
- 400g tin chopped tomatoes
- 150ml coconut milk
- A handful of fresh spinach
- Salt and black pepper, to taste
- Fresh coriander, to serve
- Fresh lime, to serve
Cooking Instructions
- 1. Heat the oil in a large frying pan and gently cook the sliced onion for 5–6 minutes until softened.
- 2. Add the garlic, ginger and curry powder and cook for another minute until fragrant.
- 3. Stir in the chopped tomatoes and coconut milk. Season with salt and pepper, then simmer gently for 8–10 minutes to allow the sauce to thicken.
- 4. Cut the haddock fillets into large chunks and gently place them into the curry sauce.
- 5. Cover the pan and simmer for 5–7 minutes, or until the haddock is cooked through and flakes easily.
- 6. Stir through the spinach and cook for another minute until wilted.
- 7. Finish with fresh coriander and a squeeze of lime. Serve immediately with basmati rice or naan.
