Easy Haddock Curry

This easy haddock curry is a delicious, comforting midweek meal that’s packed with flavour and ready in around 25 minutes.

Tender haddock fillets are gently cooked in a creamy tomato and coconut curry sauce, with garlic, ginger and warming curry spices.

It’s simple to make, light enough for a weeknight dinner and delicious served with fluffy basmati rice or warm naan.

  • 2 Haddock Fillets
  • 1 tbsp vegetable or olive oil
  • 1 onion, finely sliced
  • 2 garlic cloves, finely chopped
  • 1 tsp fresh grated ginger
  • 1–2 tbsp curry powder, depending on taste
  • 400g tin chopped tomatoes
  • 150ml coconut milk
  • A handful of fresh spinach
  • Salt and black pepper, to taste
  • Fresh coriander, to serve
  • Fresh lime, to serve

Cooking Instructions

  • 1. Heat the oil in a large frying pan and gently cook the sliced onion for 5–6 minutes until softened.
  • 2. Add the garlic, ginger and curry powder and cook for another minute until fragrant.
  • 3. Stir in the chopped tomatoes and coconut milk. Season with salt and pepper, then simmer gently for 8–10 minutes to allow the sauce to thicken.
  • 4. Cut the haddock fillets into large chunks and gently place them into the curry sauce.
  • 5. Cover the pan and simmer for 5–7 minutes, or until the haddock is cooked through and flakes easily.
  • 6. Stir through the spinach and cook for another minute until wilted.
  • 7. Finish with fresh coriander and a squeeze of lime. Serve immediately with basmati rice or naan.
