Ingredients
- 2 tbsp olive oil
- 2 fresh tuna steaks
- 1–2 garlic cloves, finely chopped
- 1 small red chilli, finely sliced (optional)
- 1 lemon (juice + wedges to serve)
- A handful of fresh herbs (basil, coriander, or parsley)
- Salt and black pepper, to taste
Cooking Intructions
- 1. Prepare the tuna Pat the tuna steaks dry with kitchen paper. Season both sides generously with salt and black pepper.
- 2. Heat the pan Heat a frying pan or skillet over high heat until very hot. Add olive oil.
- 3. Sear the tuna Place the tuna steaks into the hot pan. Sear for 45–60 seconds per side depending on thickness. The outside should be golden and crisp while the inside stays pink.
- 4. Add flavour In the final moments of cooking, add garlic, chilli, and herbs to the pan. Spoon the infused oil over the tuna for extra flavour.
- 5. Rest & serve Remove from the pan and let rest for 1 minute. Slice and finish with fresh lemon juice.
