For the salmon burgers...
- 500g skinless salmon fillet, cut into chunks
- 60g white breadcrumbs
- 1 egg white
- 1 small shallot or 1/2 onion, finely chopped
- 2 teaspoons fresh basil, chopped
- Salt and freshly ground black pepper
- 2 tablespoons vegetable oil, for frying
For the basil & lime mayonnaise...
- 165g mayonnaise
- 1½ tablespoons fresh basil, finely chopped
- 1 lime, zest and juice
- 1 garlic clove, crushed
- Salt and freshly ground black pepper
To serve...
- 4 focaccia buns, lightly toasted
- Lettuce leaves
- 2 tomatoes, sliced
- Chips or sides, to serve
Cooking Instructions
- 1. Prepare the salmon mixture. Cut the 500g salmon fillet into chunks and place in a food processor with the breadcrumbs, egg white, chopped shallot and basil. Pulse until combined but still slightly chunky. Take care not to over-process the mixture. Season with salt and freshly ground black pepper.
- 2. Shape the burgers. Divide the mixture into four equal portions and shape into burgers. Place on a plate and refrigerate for 30 minutes to firm up.
- 3. Cook the burgers Heat the vegetable oil in a large frying pan over a medium heat. Add the salmon burgers and cook for approximately 3 minutes on each side, or until golden brown and cooked through.
- 4. Make the basil & lime mayonnaise. Mix the mayonnaise with the chopped basil, lime zest, lime juice and crushed garlic. Season with salt and freshly ground black pepper to taste.
- 5. Place lettuce and sliced tomato on the bottom half of each toasted focaccia bun. Add a cooked salmon burger and spoon over the basil & lime mayonnaise. Top with the other half of the bun. Serve immediately with chips or chosen sides.
